From a Brooklyn Pizzeria to Nationwide Sensation

Mike's Hot Honey has been elevating everyday food experiences since 2010, when its first drizzle on a pizza at Paulie Gee's in Brooklyn sparked a nationwide sensation, creating a new category of pizza topping.

Mike started selling his hand-made hot honey bottles to the pizzeria's patrons and local businesses, fueled by popular demand. Today, Mike's Hot Honey can be found in thousands of restaurants and retailers across the country, with the same original recipe inside. Using 100% pure honey infused with real chili peppers, its one-two flavor punch of sweetness then heat makes any dish more dynamic, from the original pairing on pepperoni pizza to chicken, cheese and charcuterie, vegetables, ice cream, dressings and marinades, cocktails, and much more.

While studying abroad in Brazil, Mike visits a pizzeria where he finds jars of honey with chilies sitting on the tables for drizzling on pies. He falls in love with the unique flavor profile of the honey and is blown away by how good it tastes on pizza.

Early chili and honey infusion experiments

After months of experimentation with chili pepper-honey infusions, Mike settles on a recipe for his original honey infused with chili peppers and gives out jars to friends and family as holiday gifts, dubbing it Mike’s Hot Honey.

Paulie Gee’s

Paulie Gee’s pizzeria and early Mike’s Hot Honey imagery

While apprenticing at Paulie Gee's pizzeria in Brooklyn, Mike brings in a bottle of Mike's Hot Honey for Paulie to taste on a pizza. Paulie loves the combo and asks Mike to produce small batches for the pizzeria to drizzle on their pies. The Hellboy pie, with hot Soppressata and a drizzle of MHH, becomes an instant hit.
